I do use the amp sims for bass, but I put them on after I record the track. Mainly for that reason, but also because I think I get a better sound with a mic on my amp, and lately, using my Vox ToneLab instead. I personally don't use the guitar amps in GB or Logic. The more you tax the CPU while recording, the more latency you are likely to experience. T1® as part of OSX Aggregate Audio Device. If you import something sampled at a rate of 22k, it will play faster and at a higher pitch in GarageBand. If you import something recorded at a sample rate of 48k it will play slower and at a lower pitch in GB. Also, if you are trying to use the GB amp sims, they also can result in latency. GarageBand plays everything at a sample rate of 44.1k.
If you really want to record into the future, a better interface than the iMic would be a great investment imho. I record dry, and use the direct monitoring function on my Tascam US-122, and I get no latency at all, and never have. Also, record you tracks dry, and add the GB effects afterwards, as they can add a lot of latency while recording.
Connect your guitar to the Guitar Jack on the Audio Interface. Switch on your iPhone (the LED light on the iRig devices will become blue) Launch the GarageBand. Connect your iPhone to the iRig product’s Micro-USB port via a Lightning connector to the Micro-USB connection. It won't be as much fun, but it should solve the latency. The best way to make iRig function with Garageband. When an external microphone or other audio device (such as a headset or an audio interface) is connected to your iPad, the input level can be set automatically.

In Logic Pro X, choose File > Share > Project to GarageBand for iOS. Are you micing an amp? or an acoustic guitar? Either way, one thing you might try, is to turn OFF monitoring in GB, and pull one ear off the headset so you hear yourself live in one ear, and the recorded stuff in the other. GarageBands capabilities range from recording multiple tracks of audio with filters that realistically simulate sampled instruments to simple voice recordings. In GarageBand, choose Share > Project to GarageBand for iOS. There is no plugin that i know of that will do that for you. I don't think the iMic has any "direct monitoring" feature, which is found on more expensive interfaces. GB1 vs GB2 has really nothing to do with latency problems.
